The history of the Cellier des 3 Collines
Before 1987
Three cellars, three villages, one terroir.
In Trans-en-Provence, Draguignan and Flayosc, the cooperative wineries La Transiane, La Dracénoise and La Flayoscaise punctuated local wine-growing life.
1987
First union: La Transiane joins La Dracénoise.
The two cooperative wineries of Trans and Draguignan are joining forces to face the challenges of the sector and perpetuate their know-how.
2007
Birth of an expanded alliance.
La Dracénoise merges with La Flayoscaise, thus bringing together the three wine-growing villages of central Var.


2010
A necessary turning point.
The historic cellars of Draguignan and Flayosc are becoming obsolete.
A decision had to be made: build a new, modern, unique and functional cellar.
2011 – Rond-Point Michelage, Flayosc
A strategic location chosen.
Located between the hills and a busy road, the Rond-Point Michelage site has been chosen to house the future cellar.
Fall 2011
Work begins.
The work begins, driven by a vision: to offer a modern tool that lives up to the terroir and its winegrowers.
July 2012
Inauguration of the Cellier des 3 Collines.
The new building opens its doors:

A warm shop
A meeting room for exhibitions and events
The cooperative's administrative offices
The name " Cellier des 3 Collines " is a tribute to its roots. It refers to the three emblematic hills where the cooperative's historic vineyards are located:
La Sigue , in Flayosc
Le Seyran , in Draguignan
Malmont , the highest point in the region
The fingerprint of our logo, graphic and symbolic, evokes both the topography of the vineyard and the furrows of the plowed earth, a living memory of the work of the cooperators.


Our terroirs & cooperators
A wine-growing community
Today, Le Cellier des 3 Collines brings together more than 50 members, men and women passionate about the vine.
Their plots extend over approximately 160 hectares, spread across the communes of Flayosc, Draguignan, Trans-en-Provence and Callas.
Nearly 70% of production is in Côtes de Provence.
A reasoned and refined production
Each year, the Cellar produces an average of 8,500 hectoliters of wine, or:
72,000 bottles
Around 70,000 Bag-in-Box (BIB), divided between 5L and 10L formats
The grape harvest
A key moment in the wine cycle
The harvest takes place over 4 weeks , generally between the end of August and mid-September, depending on weather conditions.
Every day, between 30 and 60 tonnes of grapes are harvested, mostly by machine, very early in the morning - sometimes even at night - to preserve the aromas.
The wine is started by the Cellar Master and the wine technician, after checking the maturity of the grapes.
The schedule is then validated with the Board of Directors .
A specific day is dedicated to the harvest of white grape varieties.


Winemaking
Between tradition and precision
Each vintage follows a rigorous process, designed to respect the fruit and the terroir.
The Vitis 3 vintage is notably aged in oak barrels :
In white: direct vinification in barrels, 8 months of aging
In red: vinification in vats, then 12 months in barrels
The other vintages are bottled after a period of winter rest, between the end of February and the beginning of March.
Competitions & medals
Excellence rewarded
Every year, our wines participate in several competitions.
The vintages are carefully selected from around twenty vats, rated from 1 to 5, after several internal tastings and blends.
The score 5 designates the best vats: those which bear the identity of the Cellar and win distinctions.
